To make this BBQ Chicken Panini recipe, you will need the following ingredients:- 4 boneless, skinless chicken breasts
- 1 cup of your favorite BBQ sauce
- 1/4 cup olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 slices of bread (we recommend using ciabatta bread)
- 8 slices of cheddar cheese
- 4 tablespoons of butter, softened
Directions
Step 1: Marinate the chicken
In a large bowl, combine the BBQ sauce, olive oil, garlic powder, onion powder, paprika, salt, and black pepper. Add the chicken breasts to the bowl and toss to coat. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.Step 2: Grill the chicken
Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard the remaining marinade. Grill the chicken for 6-8 minutes per side, or until it is cooked through.Step 3: Assemble the panini
Preheat your panini press or a large skillet over medium-high heat. Spread butter on one side of each slice of bread. Place a slice of cheese on the unbuttered side of four slices of bread. Slice the grilled chicken and place it on top of the cheese. Add another slice of cheese on top of the chicken, and then top with the remaining slices of bread (butter side facing out).Step 4: Cook the panini
Place the panini in the press or skillet and cook for 3-5 minutes per side, or until the cheese is melted and the bread is golden brown.Tips and Variations
- If you don't have a grill, you can also cook the chicken in a skillet over medium-high heat.
- Feel free to use your favorite type of cheese - we recommend trying pepper jack or mozzarella.
- If you're short on time, you can use pre-cooked chicken or rotisserie chicken instead of grilling your own.
- For a little extra flavor, try adding sliced red onion or avocado to your panini.
